This Level 2 food hygiene and safety course expands on the basic principles covered in the Level 1 training and  provides additional and more detailed information for those handling and preparing food.  This course has been accredited by CPD and approved by RoSPA ensuring the highest standards and regulatory compliance.

Why Do I Need Level 2 Food Hygiene and Safety Training?

If you work in the three main areas (catering, manufacturing, or retail) where food is prepared made or sold then you must have an understanding of food hygiene and safety principles.  This course is specifically for those who not only handle food but are also involved in its preparation.  Listed below are some examples of professions and industry sectors where this training would be required:

Please note: If you are ONLY involved in handling food that has already been prepared  you need to complete the Level 1 food hygiene and safety training.  If you handle and prepare food (which includes manufacturing) this is the training to complete.

What Modules are Offered in the Level 2 Food Hygiene Course?

The training is presented over four separate modules, covering  key aspects of food hygiene and safety.  Several of the module headings are the same as those covered in the Level 1 food hygiene and safety course, however, the content is significantly increased and detailed due to food now being handled and prepared:  The modules are:

  • Module 1: Food Safety Legislation
    This module gives a detailed overview of key aspects of food safety and hygiene that is essential for those who handle and prepare food.  Some of the key areas covered includes:

  • Corporate Liability & Due Diligence Defence
  • HACCP Principles
  • Premises Hygiene Standards
  • Personal Hygiene
  • Cross Contamination & Reporting
  • Principles of Food Safety Hazards and Risks
  • Food Safety Enforcement Action
  • The Benefits of a Documented Food Management System
  • Module 2: Hazards from Delivery to Service
    In this module food safety hazards and risks which can arise in the stages from delivering food to serving it to the public is examined.  The potential risks from allergens, micro-organisms and contamination, to the importance of personal hygiene in food hygiene is explored.
  • Module 3: Risk Control
    In this module risk control measure used to prevent contamination is covered.  What keeps food safe will be  examined and the importance of having efficient processes (policies and/or procedures) during processing, preparing, storing and serving of food is discussed.
  • Module 4: Pests, Premises and People
    The final module looks at the importance of premises and people and the importance of dealing with pests in order to keep food safe.  Good premises management and key personal hygiene practices is also covered.  Finally the key areas already covered in the course is summarised.

What Will you Get Once You’ve Completed the Course?

Once you have completed the course you will be able to print off your level 2 food safety/hygiene certificate demonstrating that you have attained a level of understanding and competence to handle and prepare food safely.  The certificate is embossed with the logos of CPD and RoSPA.  A copy of an example certificate can be seen here.  Whichever course is taken (catering, retail or manufacturing) the appropriate certificate will be  available.
