Why Do I Need This HACCP Level 2 Training?

All businesses that handle and prepare food in the UK need to have a food safety management system in place.  This system is called Hazard Analysis & Critical Control Points (HACCP).  The complexity of this system is dependent on your business, however, the 7 principles of HACCP will still apply.  This training will take you through these 7 principles with examples and handouts.

Please note: If you have not yet completed our Level 2 food hygiene and safety course it is advisable that you complete this course first as it will provide a logical progression in learning that is required.  If you have staff new to food safety who are not involved in the preparation of food, then they should complete our food hygiene certificate level 1 training.

What Modules are Offered in this Training?

The training is presented over 8 separate modules, covering  key aspects of the HACCP food safety management process.  The modules are:

  • Module 1: Key Definitions
    This module gives a brief overview of what will be covered in the training.  It covers several definitions used in food safety management that trainees need to understand.  One of the definitions that is covered is HACCP, and how it plays a key role in food safety.
  • Module 2: Microbiological Hazards and Control
    This module looks at the effects of microbiological contamination, a key food safety hazard and concentrates on food-borne illnesses and how the 5 different types of microorganism contamination can lead to food-borne illnesses and how they can be controlled.
  • Module 3: Chemical Hazards and Controls
    This module looks at chemical hazard contamination of food and controls that need to be implemented to control food-borne illnesses.
  • Module 4: Allergens and Avoiding Cross-Contamination
    The importance of allergens within food safety management is covered and the need to avoid cross-contamination.  Food allergy statistics within the population is discussed to give an overview and understanding of the problem.  The 14 current allergens which are legally controlled within the UK are specified.
  • Module 5: Physical Hazards and Controls
    The importance of protecting food from physical hazard contamination is discussed.  Glass, metal, plastic, stone, wood are some of the physical hazards that can contaminate food and ways to detect and eliminate these hazards are suggested.
  • Module 6: Prerequisite Programmes
    Prerequisite programmes are those things that must be in place before a food business can operate.  This module covers key prerequisites that are essential.  A prerequisite document template is provided to download.
  • Module 7: Implementation of HACCP
    This module reveals how HACCP can be implemented.  Throughout the module the 7 principles of HACCP which were highlighted briefly in module 1 is discussed in greater detail.  All the processes covered in the module have downloadable charts, forms, checklists, etc as examples of implementing a HACCP programme.
  • Module 8: Principles of Hazard Control in Practice
    This final module takes the 7 principles of hazard control in the course and implements them into a HACCP system through 12 step process. This is your food safety management system.

What Will You Get Once You’ve Completed the Course?

Once you have completed the course you will be able to print off your HACCP level 2 training certificate demonstrating that an appropriate level of training has been achieved.  The certificate is embossed with the CPD logo.  A copy of an example certificate can be seen here.
